Strawberry Stained Hands-Mother's Day Moment

Over the years my Mother's Day strawberry shortcake has become less and less messy. It is almost picture perfect now, with neat layers of shortcake, berries and whipped cream. Secretly, I miss the messy lumps of cake mashed with berries and mounds of Cool Whip served with strawberry stained hands.
The family makes sure to surprise me with a plate of strawberry shortcake sometime throughout the day. Some years that meant having it as dessert, other years it was our breakfast since we knew we'd be racing around at sporting events or other activities all day. Between soccer, baseball, church functions and family obligations we are always on the go. Whenever it came out, they knew I would be thrilled. Some days I believe I can live on cake, Cool Whip and strawberries.
I'm sure my husband initially suggested this dessert, since a one year old has little input. Three ingredients picked up at the corner grocery store is all he needed to thoroughly impress me with his skills in the kitchen. Quickly this task was turned over to my son, seventeen years ago. He let his younger siblings help as they could and one store bought shortcake was not enough.
One year my oldest daughter tried to make a shortcake herself. We never figured out what ingredient she missed, or inadvertently added, but an emergency- grocery store trip saved the day.
Each Mother's Day we all wonder out loud why we don't serve this delicious dessert more often, but I guess it is more special this way.
